The Program

A bar course covers technique. A food science course covers the science. A design program covers the concept. Gastro Cocktail Academy, through its partnership with Culinary Institute of Barcelona and the depth of its 9-module curriculum, covers all four, in an environment where the lab, the bar, and the creative process exist in the same space, taught by people who've applied all of it at the highest level of the industry.


Our Modules

Beverage Creation

Your territory is your ingredient list. This module explores how to turn local, seasonal, and foraged produce into original drinks with real identity - beverages that are technically refined, bottleable, and entirely your own.

Cocktail 1

Every great bartender knows where they came from. We start with the foundations - the history of cocktail culture, the spirits that shaped it, and the techniques that still define it. The building blocks for everything that follows.

Cocktail 2

This is where it gets interesting. Milk washes, carbonation, fat-washing, foams, enzymes - the techniques that separate a good cocktail from an unforgettable one. Advanced methods, taught properly, so you can make them your own. ‍

Cocktail Lab

Enough theory. Time to make drinks. This is your hands-on laboratory session - building real cocktails from aperitif to fully clarified and carbonated, developing the personal repertoire you’ll take back to your bar.

Fermentation

One of the most powerful flavour tools available and one of the most underused in the bar world. Koji, kefir, lactic fermentation, miso - this module opens up a entirely new dimension of complexity, aroma, and depth for your drinks.

Laboratory-Based Gastronomic Techniques

The garnish is not an afterthought. This module explores the science of texture like hydrocolloids, gelling agents, 3D-printed moulds, chocolate and ice cream by turning the finishing elements of a drink into something worth remembering.

R&D Methodology

Great drinks don’t happen by accident. This module gives you the creative framework to develop ideas systematically (design thinking, scamper, lateral thinking) so that innovation becomes a process you can repeat, not just a moment of inspiration you’re waiting for.

Applied Tech

Before you can create, you need to understand your tools. This module is your deep dive into the machines that power modern liquid innovation - rotary evaporators, centrifuges, freeze dryers, and more. You’ll learn not just how they work, but when to use them, and how to build a lab that works for you.

Lab R&D Methodology

Everything comes together here. Real briefs, real teams, real constraints. You’ll work through the complete R&D cycle from research and ideation through to prototype and testing, the way it actually happens in a professional innovation environment.
